Easy Creamy Cajun Shrimp Salad Recipe

Ingredients:

  • 2 1/2 Tbsp Cajun Seasoning
  • 1/2 cup Caesar dressing
  • 1/3 cup Mayonnaise
  • 2 Tbsp Olive oil
  • 3/4 tsp Sugar
  • 1-2 Lemon (quartered)
  • 1 15oz can Corn (drained)
  • 1 1/2 lbs Shrimp (peeled & deveined)
  • 2-3 Baby Lettuce
  • 8oz Grape Tomatoes (halves)
  • salt and pepper to taste

Instructions:

  1. DRESSING: In a medium bowl add 1 tsp cajun seasoning, Caesar dressing, mayonnaise, 2 Tbsp olive oil, 3/4 tsp sugar and juice from 1-2 lemon wedges (start with 1 first). Whisk to combine. Add salt & pepper to taste.
  2. Drizzle olive oil in pan over high heat. Add corn, 1/2 tsp Cajun seasoning and a pinch of salt & pepper. Stir occasional until corn is golden brown and lightly charred. (TIP: cover pan if corn begins to pop.)
  3. Heat another pan with drizzle of olive oil and add shrimp and remaining cajun seasoning and a pinch of salt and pepper.Stir occasionally until opaque and cook through. Set aside.
  4. Trim and discard root end from lettuce and chop leaves into  bite size pieces.  Toss in large bowl with half charred corn, half the tomatoes, half the shrimp and half the dressing. Add salt and pepper to taste.
  5. Topped with remaining charred corn, remaining shrimp and remaining tomatoes. Drizzle remaining dressing to taste and serve with remaining lemon wedges on the side. ENJOY!
