A Timeless Recipe for Classic Bruschetta

Bruschetta is a popular Italian appetizer that has stood the test of time. This classic Italian appetizer that is simple to make and full of flavor made with simple ingredients. Ingredients:

Topping

  • 4 Roma Tomatoes
  • 1/3 cups Fresh Basil Leaves (chopped)
  • 5 – 7 Garlic Cloves (minced) (divided 2 Tbsp for toast)
  • 1-1 1/2 Tbsp Balsamic Vinegar
  • 2 Tbsp Extra Virgin Olive Oil
  • Salt & Pepper to taste

Baguette Toast:

  • 1 Baguette
  • 6 Tbsp Extra Virgin Olive Oil (to brush baguette)
  • 1-1 1/2 Cup Shredded Parmesan Cheese
  • Balsamic Glaze

Instructions:

Tomato topping:

  • Core tomatoes and dice and put into medium mixing bowl.
  • Stack basil leaves and roll them; then thinly slice them crosswise into ribbons and add them to the bowl with tomatoes.
  • Mince garlic cloves. Mix 2 Tbsp of minced garlic with 6 Tbsp of olive oil in a bowl and set aside. Add remaining garlic into bowl with tomatoes and basils.
  • Add 2 Tbsp olive oil, balsamic vinegar, salt and pepper to taste into tomato mix and set aside to marinate (30-60 mins).

Baguette Toast:

  • Preheat oven to 400°F.
  • Cut baguette into 1/2″ slices at a diagonal angle and arrange on baking sheet.
  • Brush the bowl of olive oil and garlic that was set aside earlier on both sides of the sliced toast. Then sprinkle with parmesan cheese on top.
  • Bake for about 5 mins and then broil for 1-2 mins until golden brown on the edges and let it cool for a few mins.
  • Serve topping on toast and drizzle balsamic glaze on top and ENJOY!

Notes

You can also brush bread with some olive oil and bake. Then rub raw garlic cloves after the baguette is toasted and then add the tomato topping and serve!
